Healthy "Taco-Bake" Casseroles

Shopping List of Ingredients (Makes 2 Casseroles)
2 packages of Organic Turkey
2 Organic Onions
2 Organic Bell Peppers
4 Organic Zucchinis
2 cans of Organic Fire-Roasted Diced Tomatoes
1 Can or Tube Organic Tomato Paste, no added salt (6 oz each)
2 cans of Organic Black Beans, drained
1 package of Organic Frozen Corn
1 package Blend of Organic Super Grains – White & Red Quinoa, Millet, Buckwheat
2 packages of Organic Shredded Cheddar Cheese (16 oz each)
2 cups of Organic Chicken Broth (Chicken Broth, Chicken Flavor, Sea Salt, Onion Powder, Turmeric Extract, Rosemary Extract)
Organic Taco Seasoning – (Chili Powder, Cumin, Sea Salt, Ground Black Pepper, Paprika, Garlic Powder, Onion Powder, Crushed Red Pepper Flakes, Dried Oregano)
Olive Oil
Optional Toppings (for family casserole, Service Spoon will deliver toppings for donated casserole):
Organic Cilantro, diced
Organic Greek Yogurt (healthier substitution for sour cream)
Avocado, sliced
Hot Sauce
Tools and Utensils and You'll Need:
- 2 Casserole Dishes
- 2 Cooking Pans or Pots
- Mixing Bowls
- Cutting Board
- Knife
- Metal Spatula or Spoon
- Oven Mitts

Instructions for 2 Healthy Taco Bake Casseroles
1. Cook 1.5 cups of super grains or quinoa according to package.
2. Dice onions, bell peppers, and zucchinis.
3. Drain black beans.
4. Make taco blend. Combine:
a. 2 tbsp of chili powder
b. 3 tsp of ground cumin
c. 2 tsp of ground black pepper
d. 1 tsp of paprika
e. ½ tsp of garlic powder
f. ½ tsp of onion powder
g. ½ tsp of crushed red pepper flakes
h. ½ tsp of dried oregano
5. Coat pan with thin layer of olive oil and cook turkey in pan until there is no pink. Right before turkey is ready, add 2 tbsp of taco seasoning (or more to taste). If dry, add a splash of water.
6. In a separate pot, cook onions, bell peppers and zucchini. Add 5 tbsp of seasoning (or more to taste).
7. In 2 casserole dishes, split the following ingredients evenly: cooked turkey, cooked vegetables.
8. With the turkey and vegetables, in each casserole dish, combine 2 cups of cooked grains, 1 can of drained black beans, 1 can of tomato paste, 1 can of diced fire-roasted tomatoes, 1 cup of frozen corn, 1 cup of organic chicken broth. Fold ingredients so that everything is blended evenly.
9. Top with shredded cheddar. Make sure it is distributed evenly across the top of casserole.
10. (Once cooked, casserole can be topped with the optional toppings listed above)
11. For your family’s casserole, you can do the following:
a. To eat immediately, place casserole in oven at 350 degrees for 30 minutes, or until cheese is melted.
b. Cover, refrigerate for up to 3 days, and follow instructions above.
c. Cover, freeze, then defrost and follow the instructions above when you are ready to eat it.
12. For donated casserole, you can do the following:
a. Cover, write "date prepared___" on label and freeze.
b. If there are any additional ingredients added to your casserole not listed on the label, please add for people with allergies.
c. Please deliver casserole frozen to the school on date provided on Signup Genius. Service Spoon will deliver the toppings.
